Sharing Recipes

Thought it would be fun to share recipes.... as I love to cook, and haven't cooked in a while.  I'm getting back into the cooking grooooove. 


I have never made this recipe yet.. I'll keep ya posted on how it goes!!  We love black beans.. so it's gotta be tasty!!


 

 

Black Bean Burritos:

Ingredients


    1 C black beans
    1 C medium grain brown rice
    1 chicken breast
    1 C fresh spinach
    1/4 C Mexican style shredded cheese
    1/2 C Newman's Own Chunky Peach Salsa (or salsa of your choice - the peach salsa gives it a different twist that I really like)
    7 La Tortilla Factory High Fiber-Low Carb Whole Wheat Tortillas

Cook chicken breast
Preheat oven to 350 degrees

Cut up chicken breast and spinach

Spray a skillet and heat prepared black beans, brown rice, chicken breast and spinach until heated through. Add salsa and about 3/4 of the cheese.

Spray an 9X12 baking pan

Fill tortillas and roll into burritos.
Place in 9X12 baking pan.
Sprinkle the rest of the cheese over the top
Cook for 20-25 minutes

Serve with romaine lettuce if desired.

Makes 7 burritos

Substitutions
------------------
Swap the chicken with tofu or lean hamburger
Swap the spinach with shredded zucchini
Add 1/4 onion for flavor
